Viña Cantosán 100% verdejo is a very fresh and nice wine, without pretensions but with a strong flavor of tropical fruits and white flowers. Very easy to taste and enjoy. Its intense green color talks about its youth.</p>
<p>The winery which makes this wine is one of the most prestigious wineries in D.O. Rueda. The <a href="http://www.grupoyllera.com">Yllera Group </a>is very well-known because of its red wines, but this white verdejo rises to the occasion. And it is also quite inexpensive, you can find it around 5-6 euros per bottle.</p>
<p>I think that a good meal to match with this wine is hake in green sauce, like the one you can see in the picture below, which I had the pleasure to try a couple of days ago in the restaurant of hotel <a href="http://www.elmontico.com">El Montico</a>. The soft taste of the hake’s meat and its tasty sauce match perfectly with verdejo’s soft and acid taste. I hope you will enjoy it!</p>

The winery has been awarded recently with the Prize “Gran Zarzillo de Oro” for another wine, their Cuatro Rayas Sauvignon Blanc 2008, which I haven’t tried yet, so I can’t say if it is worthy or not.</p>
<p>My friend, José Peláez (a marketing expert), suggested me the perfect mat<a href="http://2.bp.blogspot.com/_M_Gc4X-w-Eg/Sl4gjMP9IjI/AAAAAAAAAT0/gdvkBkmrnI8/s1600-h/ensalada_bogavante.jpg"></a>ch for these wines: The <strong>clawed lobster</strong>. I can’t disagree. A fresh clawed lobster salad, with two cups of Verdejo is a great choice in a hot summer day. But, if you think lobster is a bit expensive, don’t worry, the Verdejo wines matches perfectly with many white fishes too.</p>

These grapes are mainly used in Valladolid, Ávila and Segovia; and they are the main variety in the D.O. Rueda (in Valladolid).</p>
<p>The Verdejo grapevine produces great fruity flavor wines, soft, <a href="http://www.erobertparker.com/info/glossary.asp">unctuous </a>and a little bit acid. If you pay attention you can find very nice aromas of flowers, pear, peach and pineapple. They are very nice wines for summer. Try some of them cool (10ºC is perfect) and you will enjoy a wonderful and refreshing experience.</p>

<p>Most people don&#8217;t think about their gallbladders very often, that is, until they face the painful sensation of gallstones. But a new study holds that a glass or two of wine each day may help prevent gallstone formation.</p>
<p>The findings were presented in May at the Digestive Disease Week 2009 conference in Chicago, by Dr. Andrew Hart of the University of East Anglia&#8217;s school of medicine (located in Norwich, U.K.). The study was conducted with cooperation from the gastroenterology division at the university&#8217;s hospital as well as the epidemiological department of Cambridge University and the U.K.&#8217;s National Institutes of Health. Hart and his colleagues found that drinking up to two units of alcohol per day reduces the risk of developing gallstones by one-third when compared to nondrinkers. They also found that drinking 175ml of wine per day (about 6 ounces) offered a 32 percent lower risk of gallstones.</p>

The pruning begins with the arrival of cold, when the plant has lost its leaves and is about to enter in a kind of hibernation. That is the ideal moment to relieve the plant from dead or unnecessary branches. This will allow the grapevine to grow stronger the next spring. But there is also another pruning which takes place now, at the beginning of summer. This is called summer pruning or green pruning, and it is essential for winemaking.</p>
<p>Most grapevines usually recover their green leaves by mid may. Due to spring showers and hot weather the plant gets green, full of leaves and new bunches of tiny grapes. Usually there are too many. If we allow them to grow, the plant would hardly be able to make all of them grow healthy. With this pruning we can select the best bunches (frequently no more than 8-10 per plant) and take out the rest. Therefore, only the best grapes will grow in the plant, being able to absorb all the necessary water and nutrients from the plant and the soil. This way we make a first grapes selection that will enhance the fore coming harvest</p>

If you visit Aranda don’t forget to pay a visit to an “Asador” which is a traditional restaurant where the specialty is the roast lamb. Delicious!</p>

<div>One of my favorite places in Aranda is “<strong><a href="http://www.torremilanos.com">Finca Torremilanos</a></strong>” which is also one of the oldest wineries in Spain. It was established in 1903 and their actual owners, the Peñalba-Lopez family, have done a great job in the last few years. They have preserved the traditional winemaking techniques (they even make their own barrels!) and, at the same time, they’ve renew the place, transforming the winery and its surroundings into a great touristic place. Today you can visit the winery, eat in its restaurant and spend a weekend in its hotel. The entire plot is a very peaceful place. The gardens are beautiful and the hotel is very nice. You can also take a walk through the vineyards and learn about the different varieties which grow in this land.</div>

But, what you shouldn’t miss if you visit Torremilanos is their wine. Their vintage is called “<strong>Torremilanos Crianza 2005</strong>” and is one of the finest red wines I’ve ever tried. Believe me, absolutely wonderful! And it makes a perfect match with roast lamb.</div>

This time the research has been carried out by the University of Wageningen (Netherlands), and was led by Dr. Streppel of the Division of Human Nutrition. The researchers found that light-to-moderate alcohol consumption of any alcoholic beverage extended life by about two and a half years. The results were even more impressive among men who drank wine (70 percent of all wine consumed was red wine) as they could live even more, two and a half years longer than those who drank beer or spirits, and almost five years longer than those who drank no alcohol.</p>
<div>Dr. Streppel suggests that the cardioprotective effect of wine could be due to the effect of polyphenol compounds in red wine, which lower risk of coronary heart disease. “But other explanations cannot be ruled out&#8221;, said Mr. Streppel.</div>

<div>I also want to stress that, among the top ten, there are four Spanish restaurants and only two French. This is, in my humble opinion, a milestone which reflects not only the good work of Spanish cooks but also the extraordinary development which has taken place in Spain in the last few years. Spain, by the merit of his own people, should be deemed today as one of the world’s leading countries regarding modern cooking, which is to say: Creativity, quality, innovation, luxury, style and the art of living.</div>
<div>The contribution made by Ferran Adrià (<a href="http://www.elbulli.com">El Bulli</a>), Andoni Arduriz (<a href="http://www.mugaritz.com">Mugaritz</a>), Joan Roca (<a href="http://www.cellercanroca.com">El Celler de Can Roca</a>) and José María Arzak (Arzak) among many others to link the Spanish image abroad to these values, is one of the most remarkable achievements made by individuals in the last decades. And, most amazing, as Ferran says, this has not been planned. The acknowledgements have come altogether without marketing campaigns or government support.</div>
<p> Now, the time has come for Spain to hold a world&#8217;s leading position. Other Spanish business people should take advantage of this powerful asset. If we are clever, this positive country’s image should help our wine makers, architects, designers and luxury industry to foster their sales around the world. Now is the time! For the Sake of Spain!</p>

The countries which belong to the “New World” of wine are those located in different continents which have recently started to produce high quality wine. Among those we should stress Australia, New Zeeland, Chile, Argentina, South-Africa or California.</p>
<p>Traditionally, it was said that the grapevine (vitis vinifera) was unable to grow outside the Mediterranean countries, that is to say, in the old world of wine. However, this plant has been proved to grow and produce excellent wines even in subtropical climates, with the appropriate pruning and care.</p>
<p>The main wine producers in the world are three countries in the old world: Italy, France and Spain, followed by two countries in the new world: United Estates and Argentina. However, the best selling wine in the planet is an Australian brand named “Yellow Tail”.</p>

Precisely its high price and short useful life has caused that same winemakers has tried to use quicker and cheaper methods for wine aging. It is quite new wine aging using oak shavings (called “<strong>chips</strong>”). Shavings are introduced in the barrels in a short of teabags to speed up the process of taste and flavors’ transferring from wood to wine, reducing the time for aging and lowering the overall cost of this process.</p>
<p>By this method you can obtain a quite remarkable flavor so that even an expert couldn’t make the difference between this wine and another with barrel aging. But shavings don’t actually improve wine aging, nor get to soften tannins; this is why these wines are often a bit more acid. Maybe this is the only way to notice it. Also, as there is not a real aging, these wines will last shorter in the bottle. However, regarding the barrel’s prices and taking into account that a chip bag’s price is just 6 euros, it seems that this “trick” could become popular in the following years. I don’t have anything against it, if it is properly described in the label, so the consumer will be aware of the bottle’s content. But, I think it wouldn’t be right to state in the label that wine has 3-4 months of barrel againg when it has been aged by “chips”. So we better watch out.</p>
